This question was in the ‘ask a question’ section of an issue of ‘Real Simple’ magazine. This is a frequent conversation for me so I thought I’d share their insights...
A. Most Foods that contain a lot of water. Meats and pantry items can withstand freezing temperatures, but their quality may be affected, says Tina Hanes, a food safety specialist with U. S. Department of Agriculture Meat & Poultry Hotline. But the following should always stay out of the freezer:
Eggs in their shell pose a health threat if frozen. Freezing cause the egg’s water content to expand, which can crack the shell and let bacteria in.
Fresh water-rich vegetables, such as cucumbers, celery, and lettuce. These freeze easily, but when the ice crystals melt during thawing, you’re left with soggy limp greens.
Soft cheeses with a high water content, such as cottage cheese, cream cheese, and ricotta. They loose their fluffy texture when the water in them returns to room temperature.
Food emulsions, such as cream and mayonnaise, which when frozen develop large ice crystals that puncture the cell walls. When they thaw, the foods separate and curdle.
This does not even go into how long food items may be kept frozen, which is a good discussion for another day...

responsible genetics, and author of ‘The GMO Deception’ getting interviewed on
morning TV.
He was
discussing a test that had been conducted by 50 scientists on genetically
modified organisms; they fed them to insects, and their stomachs exploded!
So what
happens to us?! And our environment?!
Currently
there are 560 countries around the world banning GMO’s; so what is the matter
with the United States?!

Carrots and Cancer
I was really thankful I only buy organic carrots, baby or otherwise when I read this.
I am always so outraged at the way our government allows our food to be treated I wanted to make sure to share this information with as many people as possible in hopes of informing them where these carrots come from, and how they are processed.

The following information is from a farmer who grows and packages carrots for IGA, METRO, LOBLAWS, etc.
The small cocktail (baby) carrots you buy in small plastic bags are made using the larger crooked or deformed carrots which are put through a machine which cuts and shapes them into cocktail carrots; most people probably know this already.
What you may not know and should know is the following:
Once the carrots are cut and shaped into cocktail carrots they are dipped in a solution of water and chlorine in order to preserve them, this is the same chlorine used in your pool.

What you may not know and should know is the following:

Since they do not have their skin or natural protective covering, they give them a higher dose of chlorine.
You will notice that once you keep these carrots in your refrigerator for a few days, a white covering will form on the carrots. This is the chlorine which resurfaces.
